man, those Mennonites can bake.

So, today I found myself (and still do, to be honest) completely in over my head with projects and problems, not the least of which was that my feeling overwhelmed was helping me to do precisely NOTHING about any of it. Which is how, with just an hour and a half until I had to leave the house, I found myself making 50+ cupcakes for a little girl's bday party. (*Note to self: when you jokingly give someone a gift certificate to your "bakery", do NOT assume they won't cash it!) Yeah... so I had a request for chocolate-chocolate chip cupcakes with pink icing. Which, y'know, should have been easy (it's not like this is new to me) but I REALLY like to try to do things better each time, which is why I was stalking through the 'net looking for a BETTER chocolate cupcake recipe. But, unfortunately, time was ticking away, and all of the "best" recipes all seemed to include foolish things like "melting chocolate", or "using cream"... Yeah. No. Low maintenance = good, in our house. Not to say that I ALWAYS avoid those things, but I do honestly believe that there's usually a supremely tasty, SIMPLE alternative to most things...Which is how I ended up just adapting a recipe I've made a bajillion times, though not lately, with some of my newfound baking prowess ie. I actually kinda sorta learned what I've been during wrong all these years! So, yup, "The Mennonite Treasury of Recipes". Yeah, listen, I don't know. I don't even know where this thing came from. It just sort of has always been there. And this one recipe is COVERED in butter schmears, and cocoa, and whatnot (which is MY general way of judging how useful a recipe is). And let me tell you, a sore gut, and chocolate covered kid later, they were GREAT! VERY moist, and still fluffy, chocolatey, a wee smidge salty (which is perfect, I think, to balance out icing, even the mild kind I prefer). Without further ado, I give you my no-fail chocolate cupcakes:

Ingredients:
  • 1 cup Kraft Miracle Whip (not regular mayonaise (though you could experiment with the amount of salt and whatnot if you were determined) and NOT the light stuff (too sweet))
  • 1 cup sugar
  • 2 cups flour
  • 2tsp baking soda
  • 1/4tsp plus a pinch salt
  • 1tsp pure vanilla extract
  • 5tbsp cocoa
  • 1 bag mini baking M&Ms (optional)
Preheat oven to 350F and line mini-muffin tins (or butter/spray). Blend together Miracle Whip, vanilla, and sugar. In a separate bowl sift together remaining dry ingredients. Add dry ingredients and water alternatingly to Miracle Whip mixture until combined. Add mini m&ms. Fill muffin cups approx 2/3rds full and bake for approx 14min. Let cool completely before frosting.

**I made this little S's on top of the cupcakes by simply pouring melted white chocolate wafers (easily melted in the microwave for 30 seconds) into a piping bag and then "writing" the letters onto wax paper. Pop 'em in the freezer for a couple minutes and then pop 'em off and stick them in the icing. Honestly, it's super easy!

confessions and creations

I did it. I broke down... and accepted that the major problem with providing 400 cupcakes of various flavors to your guests is NOT the actual making of said cupcakes, but rather, how in the HELL do you get 400 iced cupcakes from your home to the hall????? Yeah, maybe there's some perfect system for this, but I sure couldn't figure it out.
So, onto plan B: 8-12 individual cakes. Now, I know, I know, crazy work, right? But I am not doing "wedding cakes". Just yummy, old fashioned cakes on the beautiful vintage stands I'd been collecting for the cupcakes. There's every chance I might not even ice the majority of them... This way they can be made ahead of time, wrapped in plastic wrap and easily transported and placed on the plates, maybe with a handful of fresh berries around the edges. Why didn't I think of this before??? Now, maybe if we had a bigger wedding this would present it's own nightmares ie. How do you serve all that cake?! But I think I've got it covered: I scored a dozen cake knives from the dollar store, which I plan on sinking into each cake and folks can simply slice off a hunk themselves, family-style. Again, the ONLY reason I'm considering this is because we have less than 75 people, 90% of whom ARE our family and will not for one second find this weird. Now to bake! First up is the "white" cake demo recipe that I'm working on for my buddies who I foolishly agreed to whip up a simple cake for their own wedding ONE WEEK AFTER MINE! I'm a putz. Thankfully, the cake seems to be pretty freaking delish! Yay! I think I'm just going to do two layers, with simple strawberry jam between, iced with buttercream, with fresh strawberries tucked along the edges. Then she was just wanting a bunch of pink silk hydrangeas tucked on top. Nice and simple, the whole thing'll sit on the white, ceramic, fluted-edge cake stand I'm lending her. Oh, and you know, the site it's from rules, so that's cool. *har* Image from Lottie + Doof.And actually, while looking for a delicious white cake recipe (surprisingly difficult to come by, but it's what girlfriend wanted so...) I came across this totally adorable image for little cupcake flags on toothpicks. I think this would be SUCH a cute little diy for my now-cake table, no?! I'll let you know how it goes! Honestly. The picture above is of a DONUT CUPCAKE! This is the best thing. in the history. of the world. Get the recipe at Lottie + Doof where I will be wasting time instead of working this evening. ***Ok, fine. Technically they're muffins. But calling them "muffins" somehow implies these are LESS THAN cupcakes, which, clearly, is not true.

great ressource VI

Score! I've been trying to scout out pretty cupcake wrappers but those suckers are $1 EACH!!! Considering we're looking at 400+ cupcakes, I might as well have bought a traditional cake!!! So imagine my delight when I came across the delight that is Bake It Pretty. Their site reads like a shopping list of all of the items I've been trolling for for seriously reasonable prices! Everything from the aforementioned wrappers, to sanding sugar, icing tips, and some of the funniest, cutest favors. So great! Go check 'em out, wouldya?!So I'm split between the wrappers below, though I'm leaning towards the pink... Ideas?

mmmm... cupcakessssss....

Ok, I'm going to have to get my act in gear and start testing out the recipes for our HUGE group of cupcakes... A little inspiration here. I really kind of like how the little foil wrappers look on the first group. Simple, cheap, and I think colour-wise they should work out just right. And obviously, I am NOT going for a "beach" theme, but the idea of using simple chocolate molds to make pretty decorations for our cupcakes is pretty practical... we could have rosettes, or bows, stars, monograms, you name it! Cake Plate @ the VV Boutique!

Yippee! Clearly scored another two cake plates at the VV Boutique! For a whopping grand total of $7.99 for BOTH! Yep, that's right, recognize. So one's just a two tier embossed tin one, but it'll be cute in that it'll add some much needed difference in height. But the other one was a total score in that it was totally gungy and dirt cheap but after some clean up it's TOTALLY silver, yo! So I'm thinking I'm still on the lookout for another three plates or so, plus the "special" one for our "cutting cake". How deadly happy would I be if it could look remotely like this... awesome, right?
